Egg Muffins

Fancy a snack? Yeah me too. :) I actually found these yummy egg & spinach muffins via Pinterest on Amys Kitchen and had to have a go! Thought how perfect they are for us Slimming World slimmers.

Spray a muffin tray with Frylight and add a bit of spinach to each well. Break an egg on top of the spinach. Season with salt and pepper and bake in medium oven for aproximatly 10/15 minutes or until egg is set.
These are delicious both hot and cold and will keep in a container in the fridge for a couple of days. Great for breakfast or just a snack! And totally and utterly synfree! Whoooop!
