Homemade Tomato Sauce

I struggle with a lot of tomato sauce recipes, I often find them quite bitter and not to my taste at all until I came across this recipe. I've never been able to find the original recipe again so if it was you thanks! I've adapted it slightly and this is a family favourite. I often double or triple the ingredients to batch cook and freeze.


  • Tin of Chopped Tomatoes
  • 1tbsp Balsamic Vinegar
  • Sprinkle of Italian mixed herbs
  • 1tsp garlic
  • Splodge of tomato puree
  • 2 Courgette peeled and chopped
  • 2 Carrots peeled and chopped
  • 1 Chopped Onion
  • Vegetable Stock


Gently fry the onion in a pan until softened then add all the other ingredients. Bring to boil then simmer for as long as you can. Blend until smooth.

Perfect with pasta and home made meatballs.
