Beef & pea chilli
You gotta love mushy peas eh? Free, speedy & green - what's not to like? Did you know you can replace tomatoes in a recipe with mushy peas if you fancy a change from tomato based dishes. Want a creamy mild curry? Ditch the toms & chuck in the peas! You will surprised how mushy peas transform a dish.
Here's my version of a creamy beef chilli.
Extra lean mince
Tin kidney beans
Tin mushy peas
500ml vegetable or beef stock
Packet of chilli mix (don't forget to syn it!) or chilli flakes/seasoning (free)
Handful of chopped onion (I use frozen mixed veg of onion, celery & carrot)
Spray a pan with frylight and gently fry the onion. Once softened and mince and fry until brown. Add all other ingredients & mix well. Bring to boil then simmer for 30 minutes.
It changes a normal chilli into something totally new - try it, you will love it! :)
