Burrito Time

I love Mexican food and ok this isnt a truly traditional recipe but it is delicious and it certainly has Mexican inspiration


  • Rice
  • Salsa 
  • Sweetcorn
  • 5% mince beef or chicken pieces
  • Mixed beans
  • Jalapeno peppers if want extra spice
  • Tomato puree
  • Vegetable Stock
  • Taco or Mexican seasoning 


First of all brown the mince or chicken.

I have a pressure cooker and I simple add all the ingredients into the pressure cooking and cook for about 20 minutes. Alternatively this work just as good to add all ingredients into a saucepan ensuring to add enough stock (usually double the amount of rice you are using) Bring to boil then simmer until liquid absorbed.

This recipe will make enough for several portions. I made 10 portions - thats enough to fill 20 wraps!
