Cheesy chicken

A huge favourite with members is this classic Slimming World meal of cheesy chicken wrapped in bacon. It looks fancy but very easy to prepare & tastes delicious.
4 x Chicken Breasts
4 x Laughing cow triangles (I used low blue cheese)
4 X Lean pieces of bacon
2 x courgettes
Punnet of cherry tomatoes 
3 large potatoes peeled & cut into chips
3 large sweet potatoes peeled & cut into chips 

For the chicken:
Carefully slice chicken to make a pocket. Fill pocket with cheese triangle & top with bacon. Use cocktail stick to secure. 
Place chicken in oven dish and cover with foil. Cook on medium for 20 minutes then remove foil & cook for further 10 minutes or until chicken cooked through. 
Courgette & tomato stir fry:
I spiralised a courgette (new post coming soon) Simply get the pan very hot, frylight and add the courgette & halved cherry tomatoes. Fry on hot heat for just a few minutes then serve. Speed food at its best!
Everyone has their own version of making & cooked Slimming World chips. I always parboil the potatoes in salted boiling water for aprox 10 minutes then cook in the Acrifry for 15 minutes. If you don't have an Actifry you can bake the chips in a hot oven. Don't forget to frylight!
